Roman Sambal Red

This sambal-style hot sauce gives the recipe a zesty lime kick.

Ingredients
  1. ½ pound red red Fresno chiles or red jalapeños
  2. 1 garlic clove
  3. 1 tablespoon kosher salt
  4. ¼ cup white distilled vinegar
  5. ¼ cup fresh lime juice
  6. 2 teaspoons sugar
  7. Special equipment: cheesecloth
Instructions
  1. Pulse chiles, garlic, and salt in a food processor to a fine paste. Transfer to a glass jar; cover with cheesecloth and secure with a rubber band. Let sit at room temperature at least 1 day and up to 2 days to ferment.
  2. Transfer chile mixture to a blender; add lime juice, vinegar, and sugar and purée until smooth. Transfer to a clean jar, cover with cheesecloth, and let sit at room temperature at least 1 day and up to 2 days to ferment more. Chill until cold.
Notes
  1. It is advised that you let the sauce ferment for 1 to 2 days after each sequence of steps (as per the directions.) The longer you let the ingredients sit and ferment, the more flavorful and spicy results you will get.
